Rookworst – Traditional Dutch Smoked Sausage
Made with our pasture-raised pork, this classic Dutch-style sausage is rich in flavour, gently smoked for that authentic "rookworst" taste.
We craft our Rookworst with care, using warming spices and a natural smoking process to honour the beloved Dutch tradition. After smoking, it’s poached until perfectly cooked and ready to eat. Enjoy it warm or cold, on a sandwich, in a hearty soup, on a salad, or simply sliced with a beer.
We use a small amount of phosphate in our rookworst and here’s why:
- It helps bind the meat and fat together, which gives the sausage a smooth, even texture.
- It holds moisture, so the sausage stays juicy without needing extra fat or artificial fillers.
- It also helps keep the flavour consistent and the product shelf-stable for a reasonable time.
Phosphate is a naturally occurring mineral (found in many foods, like meat, dairy, and even vegetables). It helps us to create a rookworst that has exactly the same mouthfeel as the ones you buy at Dutch butcheries.
We avoid unnecessary additives in all our products. But in some cases, like for rookworst, a touch of phosphate allows us to make a better product without compromising on safety.
