The Omweg coppa (or capocollo) is made from the pork neck, and dry-cured for 8 to 12 weeks for optimal flavour and texture. The beautiful marbling of the meat is visible in each slice. Serve cold without any further preparation as part of a cheese or charcuterie board, enjoy on a gourmet sandwich or for breakfast as an alternative to bacon.
